做法(fǎ ):春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
