做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入(rù )生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋(sǔn ),盖(gài )上锅盖(gài )大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
