做法:春(chūn )笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加(jiā )入(rù )盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
