做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱(cōng )切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁(zhī )时(shí )盖(gài )上锅盖焖。
